Berry Overnight Oats with Almond Butter (Printable version)

Creamy oats layered with almond butter and fresh berries, ready when you wake up.

# What you need:

→ Oats Base

01 - 1 cup rolled oats, certified gluten-free if needed
02 - 1 cup unsweetened almond milk
03 - 2 tablespoons chia seeds
04 - 2 tablespoons pure maple syrup
05 - 1 teaspoon vanilla extract

→ Berries

06 - 1 cup mixed fresh or frozen berries (blueberries, raspberries, strawberries)

→ Almond Butter Layer

07 - 3 tablespoons almond butter
08 - 2 tablespoons almond milk, to loosen if needed

→ Toppings

09 - 2 tablespoons sliced almonds
10 - Additional berries for garnish
11 - Honey or maple syrup, to taste

# How to make it:

01 - In a medium bowl or mason jar, combine rolled oats, almond milk, chia seeds, maple syrup, and vanilla extract. Stir thoroughly until all ingredients are well incorporated and the chia seeds are evenly distributed.
02 - Gently fold the mixed berries into the oat mixture. Reserve a small handful of berries for topping the jars before serving.
03 - In a small separate bowl, mix almond butter with 2 tablespoons of almond milk. Stir until the mixture reaches a smooth, pourable consistency. Add additional almond milk in small increments if the mixture remains too thick.
04 - Divide half of the oat mixture between two mason jars or serving bowls. Drizzle each with half of the prepared almond butter mixture. Top with the remaining oat mixture and finish with another drizzle of almond butter.
05 - Cover the jars or bowls tightly with lids. Refrigerate for at least 4 hours, preferably overnight, to allow the oats and chia seeds to fully absorb the liquid and soften to a creamy consistency.
06 - Before serving, stir the oats thoroughly to combine all layers or leave as-is for a layered presentation. Top with reserved berries, sliced almonds, and an additional drizzle of maple syrup or honey if desired. Serve chilled.

# Expert tips:

01 -
  • Five minutes of evening effort transforms into a breakfast that feels like a treat from a fancy cafe
  • The chia seeds create this incredible pudding like texture that makes you forget you are eating healthy oats
02 -
  • Once I forgot to stir the chia seeds and woke up to a hard clump at the bottom of my jar, so mix thoroughly
  • The texture keeps improving in the fridge for up to 3 days, making batch prep totally worth your time
03 -
  • Buy chia seeds in bulk because they last forever and you will start putting them in everything
  • Invest in wide mouth mason jars because cleaning oat residue from standard openings is unnecessarily frustrating
