01 - In a medium bowl or large jar, combine the oats, milk, yogurt, grated carrots, sweetener, vanilla extract, cinnamon, nutmeg, ginger, and salt. Stir thoroughly until all ingredients are evenly distributed.
02 - Gently fold in the chopped walnuts or pecans, raisins, and shredded coconut if using. Ensure mix-ins are evenly incorporated throughout the oat mixture.
03 - Cover the container tightly and refrigerate for at least 8 hours or overnight to allow flavors to meld and oats to soften properly.
04 - In the morning, stir the oats well. Add a splash more milk if a thinner consistency is desired.
