# How to make it:

02 - Lay out a tortilla and place 2–3 tablespoons of the seafood-cheese mixture in the center. Gather the edges up and twist gently to form a sealed bomb. Secure with a toothpick if needed. Repeat with remaining tortillas and filling.
03 - Heat ½–1 inch of vegetable oil in a deep skillet over medium heat until hot but not smoking.
04 - Fry the tortilla bombs in batches, seam-side down first, for 2–3 minutes per side until golden brown and crispy. Drain on paper towels to remove excess oil.
05 - Serve warm, garnished with additional fresh parsley and lemon wedges if desired.

# Expert tips:

01 -
  • The crispy exterior gives way to an incredibly creamy, cheesy center thats impossible to stop eating
  • They look impressive but are secretly forgiving, even if your folding technique isnt perfect
  • You can prep them ahead and fry just before serving, making them perfect for entertaining
02 -
  • Overfilling the tortillas is the most common mistake, stick to 2 to 3 tablespoons maximum for easy folding
  • The toothpicks get very hot in the oil, so remove them before serving or warn your guests
  • If your filling feels too soft to handle, refrigerate it for 15 minutes before assembling
03 -
  • Chill the filling for 20 minutes before assembling, it becomes much easier to work with and less likely to leak
  • Dont overcrowd the pan when frying, which drops the oil temperature and makes the bombs greasy
  • Use kitchen scissors to snip off any excess tortilla at the top before frying for a cleaner look
