→ Wraps & Assembly

17 - 4 large flour tortillas
18 - 1 cup iceberg lettuce, shredded
19 - Extra lime wedges, to serve

# How to make it:

01 - In a bowl, combine olive oil, chili powder, smoked paprika, ground cumin, kosher salt, and black pepper. Evenly coat chicken breasts with marinade and let stand for 10 minutes.
02 - Grill or pan-fry chicken breasts over medium-high heat for 5 to 6 minutes per side, or until fully cooked and internal temperature reaches 165°F (74°C). Allow to rest before slicing thinly.
03 - In a medium mixing bowl, combine corn, red onion, jalapeño, cilantro, mayonnaise, sour cream, garlic powder, lime juice, and crumbled Cotija cheese. Mix thoroughly until evenly coated.
04 - Heat large flour tortillas in a dry skillet or microwave for 10 to 15 seconds until pliable.
05 - On each tortilla, layer shredded iceberg lettuce, sliced chicken, and generous spoonfuls of the street corn mixture.
06 - Roll each wrap tightly and slice in half if desired. Serve immediately with extra lime wedges on the side.

# Expert tips:

01 -
  • Everything rolls up neatly, so clean-up is refreshingly simple after a full-flavored meal.
  • This wrap comes alive with the crunchy, creamy, spicy notes I can never quite resist.
02 -
  • If the chicken is sliced before it rests, the juices leak out and dry up everything inside your wrap.
  • Letting the corn mixture sit for five minutes before assembling deepens the flavors in every bite.
03 -
  • I learned the hard way that the wraps hold together best if you layer lettuce first—it acts like a barrier and keeps everything crisp.
  • Adding a dusting of extra cheese on top just before serving feels indulgent and always gets a few grins.
